So I have a strict no guilt policy when it comes to food. I love enjoying good food and think guilt is unnecessary and detrimental to our psyche. Instead, I try to eat smaller portions and make food healthier choices so I never have food guilt. I devised this naturally guilt free popcorn recipe last week. You should have seen my little boys and me sitting around the table shoving handfuls of this stuff into our mouths. It makes a ton (four servings), clocks in under two hundred calories for each serving, and only has a few ingredients. Let me know what you think!
This popcorn is delicious even without the chocolate, almost a kettle corn. Try them both!
Dark Chocolate Caramel Popcorn
1 tbs oil (I use coconut oil. It has a few more calories but is high in nutrition and has a high smoking point)
½ c un-popped popcorn
¼ C sugar (I use evaporated cane juice)
¼ semisweet chocolate chips*
Sprinkle of salt to taste (optional if you like sweet/salty snacks)
Heat oil over medium high heat in large saucepan/stockpot. When hot add popcorn, cover, and simmer 2-3 minutes. Popcorn will turn pale. Stir in sugar and cover. Reduce heat to medium. Shake pot every 30 seconds until popcorn pops. Remove from heat. Immediately place in popcorn bowl and sprinkle chocolate chips on top. Wait 30 for chocolate to melt before stirring. Sprinkle salt if desired. Refrigerate to harden chocolate.
